Whisk together the eggs, vanilla essence, milk and buttermilk in a bowl for about a minute, until light and fluffy
Sieve flour, baking powder and sugar. Mix into whisked ingredients until smooth
Let the batter stand for 15 min to thicken
Heat up frying pan with butter
To get height, you will need ring molds. Place these on your pan and fill up with 2cm of batter. Cook on a low heat
When you turn then over, you will probably need to loosen the edges stuck on the ring.
