Chicken Green Thai Curry

We love making food from different cultures. One of the simplest dishes we have stumbled upon is Green Thai curry.

It’s full of flavour and heat and this one is packed with veggies.

If you don’t like heat, don’t use the full amount of curry paste, but rather follow our instructions in the Notes below to find your perfect heat.

Ingredients

Instructions
  1. Heat a large pan to medium heat
  2. Add the oil, onion and garlic and cook till translucent, about 5 minutes
  3. Add the Green Thai curry paste to your taste preference to the pan and mix with the onions for about 2 minutes ( see recipe note below)
  4. Add the coconut milk and water to the pan and mix till it takes on a slight green colour
  5. Add the chicken to the pan and cook till cooked through ( about 15 to 20 minutes)
  6. Cauliflower Rice: place your cauliflower in a blender and pulse until you end up with rice-sized pieces. Place these in a microwavable bowl, covered with a piece of cling wrap. Using a fork, make a couple of holes in the plastic. Microwave for 5 minutes. If you don't have a blender, cut the cauliflower into florets the same size as your broccoli and add with the bean and broccoli
  7. Add the beans and broccoli to the curry. Cook for 5 more minutes until the veg are cooked but still have a little crunch to them
  8. Serve hot.
Recipe Notes

If you don't like heat rather add a teaspoon of curry paste and mix in the coconut milk and taste. From here you can add more paste to the coconut milk mixture before adding the chicken.

If you find it too spicy, serve with some yoghurt and lime wedge.
