Broccoli and Cauliflower Soup

That means it is time for some delicious soup. This soup is simple to make is tasty and made from a delicious superfood.

Superfood: Broccoli is one of the healthiest veggies because of its nutritional makeup. This superfood is loaded with fibre, antioxidants, and vitamin C.

Ingredients

Instructions
  1. Heat a large pot to a medium heat and add olive oil
  2. Add onion and garlic and cook until translucent for 5 min, stirring occasionally
  3. Add the stock to the pot and add cauliflower and broccoli. Bring to a simmer and let it veg cook for 30 - 40 min, stirring occasionally.
  4. While the Broccoli and Cauliflower are cooking, heat a frying pan to a medium heat and add the bacon and fry till crispy. Put aside until serving.
  5. Once the broccoli and cauliflower are soft, use a stick blender or standing blender to blend your soup till in your pot till smooth.
  6. Serve with salt, pepper and grated cheese and bacon.
