About a year a go I feel in love with cauliflower. You can make cauliflower rice, cauliflower mash and even pizza bases. Since I am always trying to eat more veggies, it became a staple in our house. Last week we decided to try something new- Cauliflower pops.
I found a few recipes online and in Magazines but none really stuck. A few used buttermilk, some used coconut cream, some used cornflour and other used panko bread crumbs. After some reading so many recipes, I decided to make my own.
I went with more with Asian inspiration and used coconut cream and Panko bread crumbs. I mixed some flour with the Panko as the Panko doesn’t stick well by itself.
We made them as a side but quickly realized these would be great as the main of the meal. I have a vegetarian friend and I never know what to cook,so this is definitely on the list!
