gnocci {eatalian}

I always thought it was tough to make gnocchi but then we actually tried it. It takes time but that is the worst of it. 


3 Large potatoes ( I used Sweet potatoes)
1 cup all purpose flour + extra
1/2 cup almond flour
1 Whole egg
Freshly grated Parmesan cheese
An Italian tomato sauce 


• Bake the potatoes. Once ready, scoop out the soft insides and let cool

• Add the egg and mix

• Add the flour and mix ( add more if needed – the mixture needs to bee slightly sticky)
• In a large pot of boiling salted water, cook the gnocchi until they rise to the top of the water. If you leave them longer once they have floated to the top you end up with a soggy mess.
• Remove the gnocchi and place in a warm bowl. Cover in the tomato sauce or any italian sauce of your choice.
